I think you have to change something in the settings of the viewports applet.
[Q]

Try clicking with the middle mouse button on the applet, this way a settings window should appear and there was something with "rows"...

the applet use the gtk icon theme to get the trashcan icon so...
[Q]

I guess you can change the icon in your /usr/share/icons/**Theme Name Here**/**icon theme size**/places/ folder. just find the trash icon and change it(as super-user) for whatever icon you want, just keep the same name you know...
[Q]

The folder emplacement may change between distros, i'm on fedora
[Q]

btw i haven't tried but it should work.

the problem with this is that your new icon will replace every trashcan icon on your desktop, not only the awn bar. but i guess it's not a big deal.

time87, well I also have unchecked "expand" in properties. Then I have two buttons on the top and bottom (as you can see on my screenshot - the white buttons). Just click on one of the buttons and drag it up to the right hand corner. (Make sure you have disabled making the buttons clickable for hiding... in which case you can't use them to drag the menu, as the menu will hide when u clikc them. On my screenshot they are enabled, so I have to disable to make it dragable)
